Mexican pinwheels are a bite-size tortilla roll appetizer filled with a Mexican-spiced cream cheese mixture highlighted with a piece of pineapple in the center. It’s a party favorite that can be as spicy (or not) as you want.

Ingredients:
12 oz soft cream cheese
8 oz sour cream
2 tbsp. taco seasoning
Dash onion powder
Dash garlic powder
Dash cumin
Dash paprika
1/2 cup fresh cilantro leaves, chopped
4 oz can green chilies, chopped
10-12 oz Mexican cheese blend, finely shredded
12 (8 inch) flour tortillas
8-10 oz bag fresh spinach whole leaves
8 oz can pineapple chunks, drained
Way of preparation

Step 1
In a medium bowl, add cream cheese and sour cream and blend together with a spoon. Add in all the seasonings and spices, then green chilies, and cheese. Blend again, chill in the refrigerator covered for at least 2 hours or preferably overnight.
Step 2
To assemble a roll, work with one tortilla at a time. Scoop and spread about ½-¾ cup of the mixture evenly over the tortilla. Cover tortilla up to an inch from the edges. Add a spinach leaf layer on one side.
Step 3
Roll the tortilla tightly like a jellyroll starting on spinach side. Place the roll seam-side down in a plastic container. Continue with the remaining tortillas until all 12 have been wrapped. Refrigerate up to an hour’s time to serving.
Step 4
Place one roll on a cutting board and cut into 1-inch slices with a serrated knife. Discard the two ends. Place a pineapple piece into center of the slice, pierce with a tooth pick and place on serving tray. Repeat this step with each slice. Repeat steps with each of the rolls.

Serving:
Add some fresh cilantro leaves to top of pinwheels tray to garnish. Serve with salsa to dip in and enjoy.
