Daikon salad is popular in both Japanese and Korean cuisine. It highlights the crunchy texture and mild, slightly peppery flavor of daikon radish. The salad can be served as a side dish, appetizer, or part of a larger meal, and it is often paired with rice, grilled meats, or other Asian dishes.

Ingredients:
1/2 daikon radish
sesame seeds
cherry tomatoes
rocket
cucumber
katsuobushi dried bonito flakes
nori seaweed
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1/2-1 tsp sugar
Way of preparation

Step 1
Prepare the dressing: Put 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil and 1/2-1 tsp sugar in a bowl and stir well. Set aside.
Step 2
Slice the daikon: Peel and slice the 1/2 daikon into thin strips. Soak in ice water for a while to make it crispy. Drain well and squeeze to get rid of any excess moisture.
Step 3
Mix the daikon with the dressing: Serve with other vegetables such as cucumber, rocket, carrots and tomato on a plate.
Step 4

Serve and enjoy: Sprinkle the sesame seeds over the salad. Enjoy.
